Piora | NYC

Wine from Switzerland is damn good and I had the pleasure of enjoying it, in addition to a seasonally-inspired tasting, at Piora located in NYC's West Village. An exchange on Instagram with Victoria James--the restaurant's super-talented sommelier--led to my visit to the New-American restaurant, where intimate vibes and solace for solo diners can be found.

I'm a huge champion of rosé, enjoyed year round with all types of cuisines, so when my tasting at Piora started out with Domaine Comte Abbatucci's 2014 Gris Imperial Rosé, I knew it was the start of something amazing. Savory, saliva-inducing, light in alcohol and showing nice minerality, this selection paired perfectly with the Madai, a Japanese, sushi-grade delicate fish.

As a red wine lover I'm on a quest to find and drink more Swiss white wines after enjoying Louis Bovard Dezaley Grand Cru Medinette 2011. Why? One sip of this selection shows fresh, crisp flavor with hints of mineral tones that was absolutely lovely. This wine held up nicely to vegetal ramp bucatini, pancetta, Parmesan and a sous-vide egg. I want this, at least once a week, all Spring long.

This bone-in beauty, a Colorado lamb, paired with pickled grapefruit rind, Fiddlehead ferns atop a carrot puree, and a lamb jus flavored with grapefruit juice...talk about flavor. For the third dish, Victoria poured Balgera Valgella Riserva 2001 Valtellina Superiore, a smooth Italian red full of black fruit and a hint of spice. Classic red wine and red meat pairing done right.

Ending on a sweet note was deconstructed s'mores, complete with the smokey flavor only the true campfire treat could have. The dessert was paired with Domaine Thunevin-Calvet Maury 1990. Hailing from Languedoc-Roussillon, this vins doux naturels, a port-like dessert wine, was the absolute perfect pairing with chocolate. Needless to say, it was decadence with every sip and bite.
